Gyokuro, whose name means "jade dew" is Japan's finest and often costliest tea. It is not uncommon for a pound of the rarest Gyokuro to sell for thousands of dollars. While the young leaves of the spring flush develop, the tea bushes are shaded from sun for three weeks. The sun-deprived tea that grows in the shade is high in chlorophyll, which makes it darker than normal, but lower in tannins, which makes it sweeter and mild tasting.

Gyokuro is also ground down and made into a green tea powder known as 'matcha'.

I’ve tried a lot of green teas, but this one has that deep, almost buttery sweetness I never get from cheaper leaves. The name “jade dew” makes sense once you see the vivid green color after brewing. It’s pricey, sure, but a little goes a long way and the flavor lingers nicely between sips.

I wasn't prepared for how smooth the umami hits on the second steep, and the leaves hold their flavor through several infusions. The price stings a bit, but this is genuinely the most refined green tea I've ever brewed at home.

Penelope ★★★★★

The first steep smells like fresh, sweet spring grass with a soft umami finish that lingers ages on the tongue. I brewed it at a lower temp like the package suggested and the jade-green liquor is genuinely gorgeous. It’s pricey, but a little goes a long way when you can re-steep the leaves three tim
